So, the transition from eating crappy foods that have no nutritional value to eating nutrition rich food can be daunting. Along the way we have moments where we even try to convince ourselves we can’t do it, we miss the junktastic food, how can we live without it!!! Well this little number should convince you otherwise!
We have 2 family favourite takeaways, pizza and saag paneer! Saag paneer is a spinach based Indian dish, and I will share that in the future, but for now I am going to share my simple yet Delicious pizza recipe! I personally use all organic ingredients. It doesn’t take long to make, and it will completely quell your takeaway cravings.
For the Base:
Makes 1 thick 9 inch/thin 12 inch base
•1 1/3 cup flour (any flour of your choosing, spelt, coconut, wholemeal, even organic white flour will be better than anything from the take away or supermarket freezer!)
•1/4tspn of sea salt/pink himalayan rock salt.
•1 pinch mixed ground pepper.
•1/2 tspn gluten free baking powder (I have forgotten the baking powder on a few occasions & it has made no difference to the final outcome so if you have none still go for it! ).
•1/3 cup milk.
•1 1/ 2 tspn of camelina/olive/ground nut oil. (Sunflower or rapeseed oil will do either).
Mix all your dry ingredients in a large mixing bowl. Then pour the milk over, add the oil, mix & knead until you get a smooth, doughy consistency. You may need a tiny splash of milk if it’s too floury, or an extra pinch or two of flour if its sticky. place bowl over the dough for ten min. While the dough sits, you can make your sauce!
For the Sauce:
This makes enough for 2 pizzas. Can be kept in Fridge for 3-4days in an airtight tub, and can be used for pastas also!
•1 tin chopped tomatoes.
•1 pinch fresh chopped basil leaves.
•1 pinch fresh chopped coriander/cilantro leaves.
•1 pinch fresh chopped parsley leaves.
•1/4tspn sea salt / pink himalayan rock salt.
•1 tspn camelina/olive/ground nut oil.
•2 med cloves garlic.
Dried herb leaves will do if you don’t have fresh herbs to hand, but fresh will give you a richer flavour.
Pop all in a blender, blend til smooth, a voila!! pizza sauce!
Next, roll your dough to your chosen shape & size, the bigger you go the thinner the base will be, so I roll it out big! Place atop grease paper on a baking tray, put in a Pre Heated oven (200°c) for 6 mins, take out and add your sauce and toppings of your choice! My favourite toppings are green olives, red&yellow peppers, and pesto with mozzarella & parmasen. The children prefer plain cheese pizza so thats what we opted for here, and still delicious!
Place in oven for 15 mins, til cheese is melted & slightly Browned.
Then dig in & enjoy!
